I wouldn't change the eyes. Hair color (and style, often) along with eye-color are usually the fastest ways for me to identify a humanized Pony, even if you break the mold a little and make them non-white.

I remember seeing a fanart once that had a black Pinkie Pie (a little larger, too.) It didn't really work because they made her hair black and while that might work more for real life, it wasn't immediately identifiable as Pinkie Pie.
